Butterbeer Cupckaes

I've been anxiously waiting to try this recipe for about a week now, and yesterday since I didn't have school I decided to give it a try.  Talk about delicious!  If you are a Harry Potter fan and love butterscotch flavor, these are a must make!  The original recipe came from Erica at Erica's Sweet Tooth.  Be sure to check out her other recipes while you are there, she has some great stuff!  I made a few alterations to the recipe which will be marked in red below.

Butterbeer Cupcakes

Cupcakes:

-2 cups flour (I used cake flour, in which case you add two more Tablespoons, in order to get fluffier cupckaes based on the comments)
-1 1/2 tsp baking powder
- 1/2 tsp baking soda
-1/4 tsp salt
-1/2 cup unsalted butter, at room temperature
-1/2 cup sugar
-1/2 cup dark brown sugar
-3 eggs
-1 1/2 tsp vanilla
-1 tsp butter flavoring
-1/2 cup buttermilk
- 1/2 cup cream soda

Butterscotch ganache:

-11oz butterscotch chips
-3/4 cup heavy cream

(You could probably 1/2 the ganache recipe depending on how full you like the cupcakes but we had a TON leftover)

Frosting:

-1/2 cup unsalted butter at room temperature
-1/3 cup of butterscotch ganache
-1 tsp vanilla
-1 tsp butter flavoring
-1/8 tsp salt
-1 lb of powdered sugar
-splash of cream as needed

(I found that this was more frosting that we needed and we even piled the frosting high like in the picture so if you like less frosting, cut this in half.  I also thought that this was a very sugary and heavy frosting.  If you like whipped frosting, I would recommend this frosting recipe instead:

1 box sugar free butterscotch pudding mix
1 8oz container of Cool Whip
1 cup of milk

Combine pudding mix and milk in a large bowl.  Fold in cool whip.)

1. Preheat your oven to 350 degrees Farenheit and put liners in the pan.
2.  In a large bowl, mix together flour, baking powder, baking soda, and salt.
3.  In another bowl, use an electic mixer to cream together the sugars and butter until light and fluffy, 2-3 minutes.
4. Beat in the eggs one at a time, while scrapin the sides of the bowl.
5. Add vanilla and butter flavoring.
6. Combine buttermilk and cream soda in a small bowl.
7. Alternate adding the buttermilk mixture and the flour mixture to the egg mixture and mix together well.
8.  Fill the liners 3/4 full and bake for 16-17 minutes.  Cool completely on wire racks.

9. For the ganache, melt the chocolate chips and heavy cream in a double boiler until smooth.  Allow to cool.
10.  Fill a squeeze bottle some kind of filling device with the ganache and squeeze about 1-2 teaspoons of ganache into the cupcake.

11.  For the (buttercream) frosting, cream the butter in a bowl using an electric mixer.
12.  Add vanilla, ganache, butter flavoring, and salt and mix well.
13.  Beat in powdered sugar for about 2 minutes.
14.  Add cream a little at a time until you reach a desired consistency.

15.  Pipe or spread frosting on top of cupcakes.
16.  Sprinkle leftover ganache on top of the frosting.


These would go well with some chocolate frogs and Bertie Bott's Every Flavor Beans :)

Snow Day?!?

No school and no work for either of us today!  I don't know how many inches of snow we got but in some places it was 3/4 of the way to my knees.  Luckily I went to the grocery store yesterday.  Here are some pictures of what our winter wonderland looks like:

Problems with Online Orders - What Do You Do?

Your package finally came in the mail after waiting for the longest 2 weeks of your life and you open it to find out that you were sent the wrong item, or the dress doesn't quite fit.  Now, not only do you have to send the item back, but you also have to wait for another item and possibly even call customer service.  How do you deal with this situation without deep frustration and the possibility of being charged twice or your package getting lost?  Today I want to share some tips with you on how to deal with online orders that did not arrive as planned.

I recently ordered some items from the Disney Store to get some gifts for my nieces and nephews.  They were having some great sales on toys and I found an adorable Toy Story purse and a CARS waterbottle.  Shipping was $5 but I got such a great deal on the purse that I was willing to pay shipping (I usually don't buy online unless free shipping is offered, such as around holidays or like yesterday, President's Day.)  I placed my order and the next day I received an email saying that the Toy Story purse was out of stock and that the price of that item would be removed from my bill.  I was very upset to have to pay $5 shipping for the water bottle alone, making an $8 item a $13 item.

I contacted The Disney Store via email and asked if I could cancel the order.  I recieved a long automated response containing reasons why they could not cancel the order.  I emailed them two more times asking if I could instead pick out another item, but by the time I got another automated response, the bottle had already shipped. I received my item about a week later only to look on the website and find out that the purse was back in stock.  Was I going going to pay another $5 to have the purse shipped?  Nope.  So what do you do when things just aren't working out with  your order? 


Here are a few tips when resolving your order problems:

Decide how you will contact the company:  Sometimes email works great and sometimes calling the company works even better.  Many times with email, depending on the size of the company you are contacting, you can get automated emails back which can get very annoying very quickly if they don't answer your questions.  Whichever way you chose, stick with that way until you get a response.  I sent an email about the purse being back in stock, but couldn't wait so I called and by the end of the day I had TWO purses coming in the mail and paid shipping for one of them.  Lesson learned - if you call, mention that you have also sent emails if possible.

Know What You Want:  Before calling or emailing, sit down and think carefully about what it is you want to happen in the end.  Chose your words carefully (don't lie) and try to explain things in a way that make sense and express your concern.

Be Assertive, But Polite: I don't like confrontation at all.  Even talking on the phone to some people makes me nervous, but you can't sound like you don't know what you are talking about.  By knowing what you want, you have a goal in mind of where you want the conversation to go.  Treat the person on the other side of the line like you would want to be treated and don't be rude.  But if they start beating around the bush and not helping you with your problem, redirect the conversation or simply ask to talk to someone higher up.  When I called Disney, the lady said I would have to pay shipping for the purse but the lady in my email waived the shipping.  It all depends on who you talk to.  Customer represenatives know that in order to have a customer keep coming back, they have to be happy with their purchse.  They would much rather give you a discount now or let you return the item than lose your business forever.

Follow Directions:  When returning items, it's really important to follow the return directions given to you.  There will probably be a return period which must be followed.  Often times now, companies will provide you with prepaid return labels so you don't have to pay the shipping to send an item back.  Make sure you use the right mail carrier listed in the instructions and that you attatch the right labels and include correct paperwork in the box.  Your order will get there faster and an exchange or return of your money will happen quicker.

Put Things in Perspective:  Sometimes things just don't work out the way we want.  For bigger purchases, you may need to dig deeper and talk to the higher ups for resolution, but if you are dealing with smaller amounts of money and non-essentials items (which is almost everything) then let it go this time and learn from your mistakes.  Mistakes are the greatest teacher after all.

Preventing Future Problems
There are some steps that you can take to prevent having to go through the whole process of returns or customer service:

Check Out the Company:  Have you bought from them before?  Is there an email, phone, and address listed if you need to contact them?  How is your information stored?  Read online reviews and see what kind of experience other people have had with their purchases.  If you can't find any such reviews and you have never heard of this company before, be careful and pay with Paypal if possible.

Check Out the Reviews:  Besides checking out reviews on the company, look at the specifics of each item you are buying from reviews on the store website and other sites.  I was going to buy a Rex from Toy Story plastic toy but nearly all of the reviews said his legs broke off way too easily.  How would you know that unless you read reviews?  Reviews are VITAL for making good purchase decisions.

Read the Terms of Sales and Shipping Carefully:  How long does this sale last?  Can I use coupon codes on sale items?  Can I use coupon codes with the shipping offer?  How long do I have for returns?  Who pays return shipping?  Will I get the items by the time I need them?  Can I pay with Paypal?  Ask yourself lots of questions before even clicking on the "Place Order" button.

Keep You Order Info: Keep your order number, tracking number, and any other papers or email you get for easy order reference.

Open the Package Right Away:  Don't wait 59 days until that 60 day return period is almost up to open your box and try on your new dress.  Open packages as soon as you can in case there is a problem.


In the end, my Disnetstore.com experience didn't quite turn out to be such a great deal, but I definitely learned a few things about dealing with returns and customer service.

New Design / Valentine's Day Memories

I'm happy to announce that my updated blog design is now live!  I'm so excited that I was able to learn how make make so many new things in Photoshop to get the new look I was looking for.  Hope you guys enjoy it!

So this Valentine's Day, my husband and I were home sick with sore throats :(  Luckily, it was originally our plan to stay home for the holiday, so I'm not complaining.  I got out of school early and was able to clean up the house a bit and start on my White and Dark Chocolate Pudding Parfaits.  Unfortunately, whether it was the fact that I used 2% instead of whole milk or I scalded the pudding, it didn't completely set so we had chocolate soup instead which was insanely delicious anyways!

When Matthew got home, we got out the Arbor Mist, crackers and gruyere cheese, and chocolate parfaits and watched some Dr. Quinn Medicine Woman (if you don't know about this series, you have to check it out).  Who needs a romantic movie when you have Dr. Quinn?  Anyways, then we exchanged gifts - I received some chocolates, a dozen roses, a gorgeous ring, and a completely filled out version of What I Love About You.  What an amazing gift!  Back in 2008, I bought this book filled with questions which you fill out and give to your significant other and gave it to Matthew for Christmas.  I was so excited to get a book filled out for me this Valentine's Day!  Of course it's also a great gift for birthdays or "just because."


I find it hard to find gifts for guys on Valentine's Day besides getting chocolate or junk food.  I wanted to get him something that he would actually enjoy for more than a few days.  I found an amazing deal on Amazon for Lego Batman 2 and Lego Lord of the Rings for the Wii (if you didn't know, we LOVE playing those games together and running over each other with the cars) and you should have seen the look on his face when he opened his gift!  I also made a card from a template I found online here which turned out great!  Pop up cards can be a bit tricky, but they turn out great!




Overall, we had a wonderful first Valentine's Day together and really, I think we should plan more nights to be considered "at home date nights."

Silence! Everyone will please not panic...


Haha, I love that part.
Anyways, I just wanted to give you guys a heads up of what's going on.  For that past month or so, I've been working on giving my blog a facelift.  Why?  I felt that a more streamlined look was in order and I wanted to change up my categories and gadgets so they could better fit what I like to write about.  I can't begin to tell you how much I have learned to do regarding HTML, CSS, and creating graphics in Photoshop Elements.  It's amazing what you can if you really want to.
I'm looking forward to focusing more on scrapbooking, cooking, and frugality with this new layout.  I hope you will be able to enjoy some of the topics I have planned to write about.
So everyone, please do not panic :)  Over the next 3 or so days, I will be transferring images, text, links, etc from my test blog to this one.  It will be a mess for sure but I promise to let you know when the construction is all said and done.

Honey Muffins

I've made these muffins a few times now and they always turn out great.  Just the perfect touch of sweetness!

Honey Muffins

Grandma's Honey Muffins Recipe

2 cups all purpose flour
1/2 cup sugar
3 tsp. baking powder
1/2 tsp salt
1 egg
1 cup milk
1/4 cup butter, melted
1/4 cup honey

In a large bowl, combine the flour, sugar, baking powder, and salt.  In another bowl whisk the egg, milk, butter, and honey together.  Stir wet ingredients into dry ingredients.  Fill paper lined or greased muffin cups 3/4 full.  Bake at 400 degrees F for 15-18 minutes.  Serve warm.
